Ingredients:
- 2 cups of whole or 2% milk
- 1 vanilla bean, insides scraped out
- 1 1/2 cups of coconut milk
- pinch of salt
- 1 1/2 cups of cold cooked rice
- 1/3 cup of sugar
Directions:
Combine all the ingredients together in a saucepan and simmer over medium-low heat for 40 minutes. If you have some coconut flakes, I would highly suggest you garnish with them. Allow to cool and serve.
