Bombshell Brownies

Ingredients:
Directions:

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.

Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.

Sift the flour, cocoa powder, and salt in a bowl. Gradually stir flour mixture into the egg mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.

Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting

Hot Mama Notes:
Toothpick did not come out clean at 35 minutes. At 40 minutes, I took it out of the oven. The brownies turned out delicious. Very rich and fudgy. We received lots of compliments at the pot luck. :D

Chocolate Peanut butter Pie







Ingredients:

Oreo Crust
20 Oreos (about ¾ of a full package)
5 Tablespoons unsalted butter, melted

Peanut Butter Filling
1½ cups creamy peanut butter
½ cup (1 stick) unsalted butter, softened
1 cup powdered sugar
½ teaspoon vanilla extract

Chocolate Ganache
1 cup semi sweet chocolate chips
2 tablespoons creamy peanut butter
½ cup heavy whipping cream

Directions:

Oreo Crust
Add Oreos to a food processor and pulse until you have fine crumbs.
Add the melted butter to the food processor and pulse a couple more times to combine. (If your food processor is not big enough you can do this in two batches or mix in a small bowl)
Press into a 9 inch pie pan and place crust in the freezer for 10 minutes to set.

Peanut Butter Filling
In a stand mixer fitted with the paddle attachment cream butter and peanut butter until smooth.
Add in powdered sugar and vanilla and beat on low speed until incorporated.
Spoon the peanut butter mixture into the crust. Place in the refrigerator while you are working on your ganache.

Chocolate Ganache
Add chocolate chips, peanut butter and heavy cream to a microwave safe bowl. Heat in 15 second intervals until fully melted.
Allow the ganache to cool for about 2-3 minutes. Pour and spread ontop of the peanut butter layer.
Place back in the refrigerator for at least 1 hours to set.

Hot Mama Notes:
I originally had this recipe at a Pie Party. It was so amazing that I asked for the recipe. However, when I made it for my family, we found it to be too rich. I think if I make it again in the future, I would adjust it in the following ways:
* use milk chocolate chips
* use half as much Ganache
* make twice as much crust
* potentially cut the peanut butter layer down by 25% or 30%
I think these improvements would make for a much better pie. That being said, we did enjoy it very much, and found it to be very tasty! :)

Double Chocolate Mini Muffins

1 medium/large ripe banana, peeled
1 large egg
heaping 1/2 cup creamy peanut butter (I recommend using classic storebought peanut butter, and not natural or homemade because it can be oily or separate)
1/3 cup unsweetened natural cocoa powder
3 tablespoons honey (agave, brown rice syrup, or maple syrup may be substituted)
1 tablespoon vanilla extract
1/4 teaspoon baking soda
pinch salt, optional and to taste
heaping 1/2 cup mini semi-sweet chocolate chips + more for sprinkling muffin tops

Flourless Double Chocolate Peanut Butter Mini Blender Muffins

DIRECTIONS:

Preheat oven to 400F. Prepare mini muffin pans by spraying very well with cooking spray or grease the pans; set aside.To the canister of a blender, add first 8 ingredients, through optional salt, and blend on high speed until smooth and creamy, about 1 minute.
Add heaping 1/2 cup chocolate chips and stir in by hand; don’t use the blender because it will pulverize them.

Using a tablespoon or small cookie scoop, drop rounded 1 tablespoon mounds into prepared pans. Each cavity should be filled to a solid 3/4 full.

Sprinkle each muffin with a generous pinch of chocolate chips.

Bake for 8 to 12 minutes, or until the tops are set, domed, springy to the touch, and a toothpick inserted into the center comes out clean, or with a few moist crumbs, but no batter. That’s a large range with baking time and I find with medium bananas, there’s less batter, the cavities are less full, and 8-9 minutes is about right. With a larger banana or slightly more batter in each muffin cavity, 11-12 minutes is right. For these, I used a large banana and baked 11:30. Due to the mini size and oven variance, watch your muffins closely, and bake until done.

Allow muffins to cool in pans for about 10 to 15 minutes, or until they’ve firmed up and are cool enough to handle. It’s normal for muffin tops to be quite domed in oven but flatten as they cool. Muffins will keep airtight at room temperature for up to 5 days, or in the freezer for up to 6 months. I find the muffins get softer over time and taste better on days 2-3 after the flavors have married.

Hot Mama Notes: I used 2 small ripe bananas. 1 seemed too small. I used 1T agave syrup and 2T honey. These mini muffins turned out great, and I don't even like bananas much. They are definitely super moist. You can that they are flourless, but not in a bad way. A great recipe to take to a potluck, especially where people are gluten free. I used baking cups. I needed to bake the muffins the full 12 minutes. The cups were at least 75% fun, if not a little more.

Granola Bars





Homemade Chewy Granola Bars (without corn syrup!)

Ingredients

1/2 cup peanut butter or sunbutter
1/3 cup honey
1/4 cup coconut oil (or another oil of your choice)
1 cup oats
1 cup total of any combination of: sesame seeds, coconut flakes, sunflower seeds, dried fruit, mini chocolate chips

Instructions

In a medium sized saucepan, melt together peanut butter, honey and coconut oil.Remove from heat and add one cup of oats.Choose your favorite combination of coconut flakes, sesame seeds, sunflower seeds, dried fruit and mini chocolate chips, to equal a total of ONE CUP. (I just got out my one cup measuring cup and poured in the ingredients until the cup was full.)Pour in and stir well.Spread mixture into a 8×8 or 9×4 pan.Chill for two hours, then cut into bars.

Hot Mama Notes - Mine are currently chilling in the frig, so I don't know cohesiveness yet, but they taste delicious. For my 1 cup of add-ins, I used approximately 1/2 c milk chocolate chips, and 1/2 c slivered Almonds. There are also a few heath bits thrown in. YUM! No wonder my taste test was so good!! All the chocolate chips melted, though.  Update: These could never be used in hot weather (which we live in!!) as a bar.  They are too melty, even just our of the Frig.  But they do taste good, we just need to eat them with a spoon!

Easy Brownies!

Ingredients:

2 c    Sugar
1 c    Butter
1/2 c Cocoa Powder
4       Eggs
1 1/2 c  Flour
1/2 t  Baking Powder
1/2 t  Salt
1/2 c  Walnut Halves (optional)

Directions:

Melt Butter and mix all ingredients in the order listed above.  Preheat the oven to 350F and bake for 20 to 30 minutes in a 13x9x2 pan.

Hot Mama Notes: PERFECTION!!!!  We really liked this recipe!  :)  Easy and tasty, you can't beat that!

Five-Ingredient Brownies

INGREDIENTS
½ cup flour
1 cup sugar
½ cup salted butter, melted
2 eggs
1/3 cup cocoa powder
Prepare the ingredients: Preheat the oven to 350°F. Grease a 9-by-9-inch baking pan.
Make the brownies: In a medium bowl, combine the flour, sugar and cocoa powder. In another small bowl, whisk together the butter and eggs. Add the egg mixture into the flour mixture, stirring until just combined.
Bake the brownies for 25 to 35 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool for 5 minutes. Cut into 16 squares and serve. Maybe à la mode?

Chocolate Bread

Ingredients

1½ cups all-purpose flour
¼ cup cocoa powder
1 teaspoon baking soda
Pinch of salt
8 tablespoons (1 stick) unsalted butter, melted and cooled slightly
1 cup sugar
3 eggs
½ cup sour cream
1 teaspoon vanilla
1 cup dark-chocolate chips
Confectioners’ sugar, as garnish

Directions

1. Preheat the oven to 350°. Grease a loaf pan with nonstick cooking spray.
2. Sift the flour, cocoa powder, baking soda and salt into a large bowl. Add the butter, sugar, eggs, sour cream and vanilla, then mix with a whisk until well combined.
3. Gently fold in the chocolate chips until they are evenly distributed.
4. Pour the batter into the prepared loaf pan. It should fill the pan a little more than halfway.
5. Bake until a toothpick inserted into the center comes out clean, 50 minutes to 1 hour.
6. Let the bread cool for 15 minutes in the pan, then remove it from the pan while it is still warm by inverting it onto a cooling rack. Cool completely before slicing and serving. If desired, finish the loaf with a dusting of confectioners’ sugar.

Nutella Chocolate Chip Cookies

INGREDIENTS:

1/2 cup unsalted butter, softened (1 stick)
heaping 1/3 cup Nutella (stir well before adding)
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
pinch salt, optional and to taste
1 cup white chocolate chips
1 cup semi-sweet chocolate chips 

DIRECTIONS:

  1. To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, Nutella, sugars, egg, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.
  2. Stop, scrape down the sides of the bowl, and add the flour, cornstarch, baking soda, optional salt, and beat on low speed until just combined, about 1 minute.
  3. Stop, scrape down the sides of the bowl, and add the white and chocolate chips, and beat on low speed until just combined, about 30 seconds.
  4. Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 11 equal-sized mounds of dough, roll into balls, and flatten slightly. Tip - Strategically place a few chocolate chips right on top of each mound of dough by taking chips from the underside and adding them on top.
  5. Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.
  6. Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet) and bake for about 9 minutes, or until edges have set and tops are just set, even if slightly undercooked and glossy in the center; don't overbake. Cookies firm up as they cool. Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don't use a rack.
  7. Cookies will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months. Alternatively, unbaked cookie dough can be stored in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 4 months, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.
Hot Mama Notes: Instead of 1c white chocolate chips and 1c semisweet chocolate chips, I split the 2c of chocolate chips roughly equally between milk chocolate chips, semisweet chocolate chips, and peanut butter chocolate  chips.  These cookies are VERY rich.  Good, but rich.  I am a dessert monster, and I found that one cookie (or even half a cookie!) was enough.  Which is good, I guess, since out of this batch, I made about 1.5 dozen cookies.  The cookies are very soft, too, which I liked.  However, next time, I think I would use only 1c total of chocolate chips instead of 2c total.  I didn't have white chocolate chips on hand (since I don't much care for them), and that is why I substituted in the peanut butter chips.  I am sure it is a different taste and experience from using white chocolate, but the cookies did turn out good.  I am glad I followed the directions for refrigerating the dough.  I did the minimum time of 2 hours.  I also made sure to let the cookies sit on the cookie sheet for a few minutes before removing them.  Otherwise, the cookies tend to fall apart when you move them.

Breakfast Cookies

Ingredients
  • 3/4 cup whole-wheat pastry flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons softened unsalted butter
  • 1/4 cup canola oil
  • 1/4 cup dark brown sugar
  • 3 tablespoons granulated sugar
  • 1 egg
  • 1/4 cup (1 small jar) strained carrot baby food
  • 1 teaspoon vanilla extract
  • 1/2 cup oats
  • 1/2 cup bran cereal flakes
  • 1/3 cup raisins
  • 1/3 cup walnut
Directions
Place rack in center of oven and preheat oven to 350 degrees F.
Whisk together flours, baking soda, cinnamon, nutmeg and salt in a medium-sized bowl. Combine butter, oil and sugars in the bowl of a stand mixer and mix on high speed, scraping down sides if necessary, until sugars have dissolved and mixture is light in color, about 1 minute. Add egg, carrot puree and vanilla and beat an additional 30 seconds. Add flour mixture and beat an additional 30 seconds. Add oats, flakes, raisins and walnuts and mix over low speed just until incorporated. Dough will be slightly sticky and less cohesive than traditional cookie dough. Line a large cookie sheet with parchment paper. Using between 3 to 4 tablespoons of batter, form a ball and place on cookie sheet. Repeat with remaining batter, leaving about 3 inches between cookies. Wet hands and use palm of hand to flatten cookies until about 1/4-inch thick. Bake for 12 minutes, until cookies are fragrant but still soft. Let cookies cool slightly, then transfer to a wire rack to cool completely.

Hot Mama Notes: These cookies are fantastic for healthy cookies.  They are very tasty and great for breakfast.  That being said, don't expect them to replace your favorite dessert cookie.  They are not sweet like that.  Nonetheless, my family loves them, and we continue to make them again and again.  I substitute grated carrot for the carrot baby food.  My sister in law uses apple sauce.  I might try that next time; maybe that will make them more moist.  I use regular whole wheat flour and light brown sugar (unless I happen to have dark brown).  I substitute milk chocolate chips for raisins and omit the nuts.

Peanutbutter Chip Chocolate Brownies

Ultimate Fudge Brownies with Peanut Butter Chips
makes 20 brownies

Ingredients

  • 10 tablespoons unsalted butter
  • 1 and 1/4 cups sugar
  • 3/4 cup plus 2 tablespoons unsweetened cocoa powder 
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 large eggs, cold
  • 1/2 cup all-purpose flour
  • 3/4 cup peanut butter chips

Instructions

  1. Preheat oven to 325F degrees. Line an 8×8-inch square baking pan with parchment paper, leaving an overhang to lift the finished brownies out.
  2. Melt the butter, sugar, cocoa, and salt in a large bowl in the microwave. Melt in 30 second increments and stir after each time until the butter is completely melted. The mixture will look gritty. Set aside for a few minutes as you get the other ingredients ready. You don’t want the mixture to be piping hot.
  3. Stir in the vanilla extract. Add the eggs one at a time, stirring after each addition. The batter will be thick and look shiny. Add the flour, beating with a whisk until fully combined. try not to overmix the batter at this point. Gently stir in the peanut butter chips. Pour into prepared baking pan.
  4. Bake for 25 minutes and check the brownies for doneness. Insert a toothpick inserted in the center. If it comes out with only a few crumbs, the brownies are done. Bake for 3-5 minutes if the brownies look too liquidy. Do not bake over 30 minutes.
  5. Allow the brownies to cool completely before cutting into 20 squares. Brownies remain soft and fresh stored in an airtight container for up to 7 days.

Hot Mama Notes: These brownies are very good!  Much better than the skinny brownie recipe I just tried last week.  And, as a bonus, I love that everything is made in ONE BOWL.  This is not to be underestimated as a benefit when baking!! ;)  Grade: A-

Peanutbutter Swirl Fudge Brownies

Makes 12 brownies. Full nutrition information available by visiting a calorie counting website and plugging in the ingredients. Brownies stay fresh at room temperature for 2 days, and then can be stored in the refrigerator for up to 5 days after that. Make sure oats are certified gluten free if gluten intolerant.

Ingredients

  • 3/4 cup (185 grams) creamy peanut butter (I used Jif Creamy)
  • 6 oz. low fat vanilla greek yogurt (could use fat free)
  • 1/4 cup (60 ml) skim milk (or almond milk)
  • 1 large egg (or 2 egg whites)
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup (200 grams) granulated sugar (see note above in post about substitutions)
  • 1/2 cup (64 grams) unsweetened cocoa powder
  • 1/2 cup (40 grams) old-fashioned rolled oats

Instructions

  1. Preheat oven to 350F. Spray a 8×8 inch pan with non-stick cooking spray. Set aside.
  2. Place all of the ingredients except for the peanut butter into a blender or food processor. (Yes, a blender!) For easier blending, place the liquid ingredients into the blender first. Blend until mix is smooth and oats are ground up. You will have to stop the blender and scrape down the sides a few times.
  3. Pour batter into prepared baking dish. Batter will be thin. Microwave peanut butter for about 30 seconds. Drop melted peanut butter by spoonfuls onto the batter, swirling gently with a knife to create a marbled effect. (Try not to overmix!)
  4. Bake for 20-25 minutes or until brownies begin to pull away from the sides of the pan. Brownies will be extra fudgy, so be sure to wait until COMPLETELY cooled - I stuck mine in the refrigerator for 2 hours, which allowed them to be cut very easily. Cut into 12 squares and enjoy!

Hot Mama Notes: I wasn't paying enough attention to the recipe when I was adding things to the blender (oops).  I guess this is always the problem when trying to concentrate on baking as well as three small children not destroying the house while you bake. :P  Anyway, I added ALL the ingredients to the blender *including* the peanut butter.  Oops.  Well, the batter tasted delicious, anyway, so I do not think any harm was done.  I also melted about 4 additional heaping tablespoons of peanut butter in order to make the swirls since I had no peanutbutter left thanks to my error.  These brownies look delicious!

Update: These brownies are okay, but not great.  I would give them a B.  They are rather mushy.  I guess I must like my brownies a bit cake-ier.  I wanted to like them because they are skinny brownies, but I am not sure I will make them again.  :(


Granola Bars

Makes 16 bars. Bars stay fresh at room temperature for up to 7 days. Bars freeze well, up to 2 months. Please ensure your oats are certified Gluten Free if following a GF diet.

Ingredients

  • 3/4 cup Trader Joes Cookie Butter or Biscoff Spread* (or use a nut butter of your choice)
  • 2 Tbsp coconut oil
  • 1/3 cup honey or maple syrup*
  • 1 large egg
  • 1 tsp vanilla extract
  • 3.5 cups old-fashioned rolled oats
  • 1/4 cup packed light brown sugar
  • 3/4 tsp salt
  • 2/3 cup mini chocolate chips

Instructions

  1. Preheat oven to 350F degrees. Spray a 8x8 baking pan with nonstick spray. Set aside.
  2. In a small bowl, melt the cookie butter and coconut oil for about 1 minute in the microwave. Stir until combined and smooth. Melt for longer if needed. In a large bowl, beat the melted cookie butter/oil mixture, honey (or maple syrup if you are using it instead), egg, and vanilla until completely combined. Add in the oats, brown sugar, and salt. Mix well. Slowly stir in chocolate chips. The batter will be sticky.
  3. Transfer to the prepared baking pan and press down, making sure the surface is flat and even. Bake 21-24 minutes or until set and edges are lightly browned. Allow to cool completely before cutting into squares.
Notes
*If you can't find TJs Cookie Butter of Biscoff spread, try using almond butter. The bars may not have the same chocolate chip cookie taste though. I used sugar free maple syrup, but feel free to use honey or regular maple syrup. I've tried it with both and they taste exactly the same. Try using different add-ins, like nuts or dried fruits (up to 2/3 cup total). These granola bars are highly adaptable.

Hot Mama Notes: I used regular maple syrup and Kettle Brand Almond Butter.   I used no add ins except the mini bhips.  I was very happy with the way these granola bars turned out.  Not too gooey, and more baked thanks to the egg, most likely.  A great alternative to store-bought nasty granola bars.  Not difficult to make, either.  Grade: A-

Peanut Butter Bars

Ingredients

  • 1/2 cup salted butter, melted
  • 1 cup graham cracker crumbs (about 8 full sheets) - I used the precrushed kind.
  • 1 cup confectioners' (powdered) sugar
  • 3/4 cup + 2 Tablespoons creamy peanut butter (not natural style)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Line a 8x8 or 9x9 square baking pan with aluminum foil. Set aside.
  2. In a medium sized bowl, mix the melted butter, graham cracker crumbs, and powdered sugar together until combined. Stir in 3/4 cup of peanut butter. Spread into prepared baking pan.
  3. In a small bowl, microwave 2 Tablespoons of peanut butter with the chocolate chips until melted. Stir until smooth. Spread over peanut butter layer.
  4. Chill until completely firm, at least 3 hours.

Hot Mama Notes: These bars are delicious and super easy to make.  I think the graham cracker crumbs really add a lot to the recipe.  It makes them have substance and depth.  Yum.  Grade: A

Chocolate Covered Pretzel Peanut Butter Balls

Pretzel Peanut Caramel Peanut Butter Cookie Dough Chocolate Truffles (with vegan and gluten free options)
Makes 1 dozen
1/4 cup peanut butter
1 tablespoon caramel sauce (try Dark Rum Caramel Sauce or any store-bought jarred caramel sauce or ice cream topping caramel sauce; substitute maple syrup)
2 tablespoons powdered sugar
1 tablespoon brown sugar
1/4 cup pretzels, crushed
1/4 cup peanuts, crushed
Pinch salt, optional to taste
3/4 cup + chocolate chips, melted for dipping
2 tablespoons pretzels and peanut mixture, crushed for garnishing optional
Peanut butter and/or caramel sauce drizzled over the top for garnishing, optional
Combine peanut butter, caramel sauce, and sugars in a small bowl and stir until combined.  Add the crushed pretzels and peanuts (I crush mine in a plastic baggie by beating them with the back of a knife until broken down but use a food processor or other blending device if desired).  Add the dry mixture to the wet mixture and fold to combine.
Roll the dough into small balls, no larger than 1/2 inch in diameter, and place them on a parchment-lined or wax-paper lined flat surface.  Tip: Do not roll the balls larger than 1/2 inch in diameter because they become much larger after you coated in chocolate, appearing to nearly double in size.  This is a truffle (one bite), not an apricot.  Roll smaller than you think and if the dough is difficult to work with, chilling it in the freezer for 15 minutes may be helpful.
Place the rolled cookie dough balls in the freezer for at least a half hour; the colder the better for the next step: dipping.
My process for dipping and coating the balls in chocolate involves melting chocolate chips in a small microwave-safe bowl, heating the chocolate in 20-30 second bursts, removing from the microwave and stirring after each 20-30 second interval to encourage melting.   You could do this over a double boiler if desired.
After the chocolate has melted, removed the chilled cookie dough balls from the freezer and place one ball into the bowl and toss it lightly with two forks in the chocolate bath.  Carefully remove the coated ball and set it down on wax or parchment paper.   If desired, sprinkle with crushed pretzels before the chocolate fully hardens.  Repeat this process with the next 11 balls.
You may need to reheat your chocolate mixture after a few balls, as it will cool down and become more difficult to work with.  Reheat in the microwave in 20 to 30 second bursts as needed.  After all the balls have been dipped, you can optionally add a drizzle of peanut butter or caramel sauce over the top.  Place the finished truffles in the freezer to fully set up for at least 30 minutes before serving.
Store extras in the refrigerator or freezer.
Notes and Tips:
If dough is too wet before rolling into balls, add slightly more dry ingredients (pretzel or peanuts).  Or, chilling the dough in the refrigerator or freezer helps, also.
If dough is too dry, add slightly more wet ingredients (peanut butter or caramel sauce).

To keep vegan, use vegan caramel sauce or maple syrup and vegan pretzels or similar.
To keep gluten free, use GF pretzels or similar.
Hot Mama notes: I used maple syrup instead of the carmel.  Also, I made a double batch.  Using the ingredients listed with the maple syrup instead of carmel, the mixture was too dry and crumbly to hold together to make balls. I ended up adding another 1/4c of creamy peanut butter to make it cohesive.  Even then, it was pretty dry and crumbly (but tasty!!).  I used my chopper to chop the nuts and pretzels, and that was quick, easy & efficient.  I didn't need to put the dough in the frig before rolling balls or dipping into chocolate, but maybe it would have made it easier.  It wasn't too bad, though at the end of the dipping there was little chocolate left, and that made coating the balls difficult.  The balls themselves are tasty!  :)  Also, I used the double boiler to melt the chocolate chips.  It's so much easier than microwaving a bunch of times.
