Hot Mama Notes: These pancakes are okay. We like our pancakes fluffier and lighter. These pancakes are heavier and creamier. My kids kept asking me if there were mashed potatoes in the pancakes. They didn't love them. These are okay. They are a lot of work, and I don't think it's worth the end product. Since the recipe says it is not sweet, I doubled the sugar as we like sweet pancakes. They still were not super sweet even with 2T of sugar. I also added chocolate chips.
