Ingredients:
6 chicken breasts, boneless and skinless
▢1/3 cup lime juice
▢1/4 cup olive oil, extra virgin
▢2 tbsp cilantro, chopped
▢1 tbsp garlic, minced
▢1 tsp chipotle pepper powder
▢1 tsp chili powder
▢1 tsp salt
▢1/2 tsp ground cumin
In a gallon Ziploc bag or large covered bowl combine chicken and all marinade ingredients. Let marinade for a minimum of 1 hour or as long as 12 hours. (The longer the better to really bring out the lime flavor.)
Preheat the grill to medium high heat.
Add chicken to grill. Discard the remaining marinade.
Cook the chicken, turning occasionally, until completely cooked through. This can take about 10 minutes but time varies depending on the thickness of your chicken.
Serve immediately. Garnish with a little extra fresh cilantro if you’re entertaining and want to impress your guests.

Hot Mama Notes: Our family loved this recipe! It really turned out well! I preheated the grill for 15ish minutes, and then grilled the chichen for about 5 minutes per side. I marinated for a rather short time as I was pressed for time, only about 20 minutes or so. I pounded the chicken to an equal thickness of about 1 inch using the meat tenderizer to ensure even cooking. I grilled to an internal temperature of just less than the required 165F as I didn't want it to be dry. The marinade is super tasty, and we will make it again! 😁😊
