Ingredients:
1 large onion, diced
1 zucchini, diced
4 cloves garlic
1/8 - 1/4c parmesan cheese
3T flour
1 fresh lemon, squeezed & juiced
2 handfuls fresh or frozen spinach
2t cumin
Pepper
Season salt
3 pkgs frozen large shrimp, peeled & deveined
Olive oil
Toasted sesame oil, drizzled
Soy sauce, 2T
1/2 bunch of curly cilantro, finely chopped
Instructions:
Sautee onion and zucchini until soft. Add in garlic. Add in frozen shrimp, cilantro, and spinach along with spices. Cook until shrimp is done. Add lemon juice, cheese, sesame oil, soy sauce, and flour (to thicken sauce). Serve over ramen noodles or rice.

Hot Mama Notes: This dish was incredibly flavorful and wildly exceeded all my expectations. I would totally make this again. Even my kids thought it was very good!
I served this over ramen along with curried Cauliflower and cucumbers in sour cream. The Cauliflower I steamed and then sautéed with olive oil, water, and several tablespoons of penzeys now curry and hot curry powders along with pressed garlic and toasted sesame oil.
