2-minute Microwave Oatmeal

Ingredients

  • 1/4 cup oatmeal (old-fashioned, not instant)
  • 1 tablespoon ground flax
  • 1/4 teaspoon pumpkin pie spice (or cinnamon)
  • 1 cup fat-free milk (can also substitute almond, rice or soy milk)
  • 2 tablespoons nuts (no salt)
  • 1/2 cup cut-up fresh or frozen (thawed) fruit
  • 1 tablespoon all-bran cereal

Directions

  1. In a 4-cup microwaveable bowl, combine oatmeal, flax, spice and milk.
  2. Microwave for 2 minutes on high.
  3. While oatmeal is cooking, measure out nuts, fruit and bran cereal into a serving bowl.
  4. Pour cooked oatmeal mixture into the serving bowl and enjoy.

Hot Mama Notes: Well, it doesn't look like the picture (below)! 🤣🤣🤣 But it still tastes pretty good, especially with the mangoes and blueberries I used. I also used whole milk because I had some to use up, so it is super creamy.  Next time I will use 1/2c or maybe 3/4c milk at most. I used old fashioned oats and slivered almonds. I am trying to look for better alternatives to sugary breakfast cereals. I might like a scrambled egg better! 🍳🤔🤣
